Recent disturbing events in the news have alarmed many with reports of outbreaks of serious illnesses caused by contaminated fruits & vegetables, often brought into the US from countries where standards of hygiene are not very high.  Contaminated water or unwashed hands have been implicated in transmission of serious illnesses.  After careful study, GET has developed the ideal counter-measure for sterilizing fruits & vegetables to ensure safe, healthful use by consumers, and mitigation of serious liability risks by restaurants, grocery stores, growers & distributors.

Ozone is a very effective method of pathogen destruction.  Advantages include: Continuing sterilization after treatment, modest operating costs, and effective sterilization without adding any unpleasant taste or other side effects to the products.  No additional rinsing is required after treatment.  The sink, drain boards, hood, vent, and baskets are all stainless steel.  The system is very easy to use.

Ozone molecules contain three oxygen atoms (O3), while oxygen molecules found in the atmosphere contain two oxygen atoms (O2).  The properties of the two types of oxygen molecules are quite different.  Ozone is a very potent oxidizer, and as such is effective in pathogen destruction.  As the ozone attacks pathogens, it breaks down into O2 molecules.  Since ozone has a 20-minute half-life, it continues breaking down gradually into O2, leaving no hazardous or foul tasting residual.  Escaping ozone gas is sucked up into a vent equipped with a filter to deactivate the remaining ozone.  (Ozone generation equipment is not shown in the rendering.)

Pathogens effectively killed by ozone include the common but dangerous E-Coli, Coliform, Cholera, Hepatitis of all types and other dangerous bacteria and viruses.  Treating with UV would be completely ineffective, as UV only kills pathogens at the point of contact with the UV light, which would be blocked by various shapes of vegetables or fruits.  Hence the necessity to use ozone for fresh vegetables & fruits.  Of course, chlorine has an effective residual effect, but is undesirable due to its unpleasant taste as well as its carcinogenic activity.  Also, chlorine would have to be rinsed in a separate operation, requiring more work, additional space, and leaving open the possibility of recontamination.
